Today's Gumbo

Fry Bacon in large pot
Remove Bacon once done, but leave in remaining grease
Heat grease till smoking then add 1/4 cup of flour, stir
Cook till it is brown in color
Add 1 cup of onion and stir, cook 2 min.
Add 1 cup of diced green pepper, cook 2 min.
Add 1 cup of sliced celery, stir
Add 4 or 5 shakes of Garlic Salt, Chili Powder, Cajun Seasoning, and a couple shakes of seasoned salt
stir
Cook for another 5-10 min. on medium.
Add 3/4 Lbs to 1 Lbs of sliced sausage
Add 8 cups of chicken broth and turn heat to medium - high.

In a different pan add a little oil and heat on medium
add diced chicken
Add Chili, Cajun, garlic, and seasoned salt to taste.
Add chicken to gumbo pot when cooked

Bring gumbo to boil then lower to simmer for 15-30 min.
Serve over rice with corn bread and butter
